  • Spring into Inspiration with Charming Cherry Blossoms!

    In Japan, the spring ritual of hanami cherry-blossom viewing under a clear blue sky is an absolute must. People eager to shake off the winter blues cram the parks, sitting on blankets under the trees, drinking cold beer and eating picnic delights from bento boxes.

    Here in England, my garden is liberally sprinkled with confetti-like petals of white blossom that drift languidly down from the big Damson plum tree. Blossom brings with it the warmer spring weather that we've all been longing for. However, the weather in the UK is rather less predictable (it torrentially poured in London at last year's Japan Society Hanami party!).

  • Le Creuset Stainless Steel Knob

    This is our most recent acquisition. We love our Cast Iron Le Creuset, but found it frustrating that the handles weren’t safe at high temperatures. We’d seen the steel knobs on the plain white or black pieces, but I didn’t want to sacrifice those gorgeous colours! While clicking my way through the Le Creuset website I came upon a genius idea, Le Creuset sell replacement handles. Simply by replacing the phenolic handle which is only safe up to 190°C with a pretty new steel one, I could make my dish safe to use at any temperature! A quick and simple change that lets you get the most out of your cookware, the Le Creuset Stainless Steel Knob is just £7 from Amazon.

  • Kitchen Critic's Gadget Tip

    After a long weekend baking cheesecakes and pistachio cakes, we were struck with a brilliant idea. While slicing cakes isn't difficult, it's easy to turn your beautiful dessert into a toppling mess. The extra large Mezzaluna by Typhoon quickly cuts neat straight lines through tricky cakes. Originally intended for pizzas, the long blade can give a clean professional style to your home-baked goods. Great gadgets inspire us to find new ways to use them, and this unusual knife is just begging to be experimented with. Still available from Amazon, if you like the Typhoon Mezzaluna/Pizza Cutter I'd think about buying it soon before they run out of stock.

  • Wedding Lists

    First decision you have to make is where to have your wedding list. You can find services at several large department stores across the country. Debenhams, Marks & Spencer, John Lewis and Argos all offer a selection of products for a variety of styles and prices. Some stores offer money back and discounts, but the most important factor is often which store sells the tableware you like. We chose John Lewis, who honour manufacturer's guarantees and will offer an extended guarantee on larger electrical appliances. They also are known for their price matching policy, so if your Uncle Bob can find it somewhere cheaper he can save those extra pounds. The John Lewis Wedding List is easy to manage on line, perfect for the busy bride!

    There are also online lists, which offer discounted prices and a wide selection of items. Personally we wouldn't recommend the Amazon.co.uk wedding list. With the introduction of the Amazon Marketplace, many different companies can sell through the Amazon website. And while Amazon offer free shipping on orders over £15, these other sellers set their own shipping rates. Unfortunately the current Amazon Wedding list won't let you select specific sellers. If you choose an item supplied by Amazon and it goes out of stock, the cheapest alternate vendor is automatically chosen no matter what they charge. We had a George Forman Grill jump from £24 to £109 when a special offer ran out and the only alternate vendor was asking for almost double the retail price! While these changes could be forgiven, you are never notified when sellers are changed or even when prices change. The Amazon list requires constant attention and maintenance. Even with orders through Amazon you are not notified when items have been shipped, and you aren't told where they are going to. While for some people it might not make a difference, our regular delivery person tends to abandon parcels outside. There were a few incidents when we were unsure if parcels were lost or simply sent to the guest. Over all the Amazon Wedding list requires more time and effort than a wedding list should, and with multiple sellers it's easy for less computer-savy relatives to pay too much in either shipping or cost.

  • Great Houmous Shortage of 2007

    It seems last week a routine test discovered salmonella in Marks & Spenser’s reduced fat houmous. Obviously it has been recalled and they withdrew their normal houmous as an ‘extreme precaution’. It turns out that Bakkavor, the Icelandic manufacturer also produces houmous for Tesco, Sainsburys, Co-op, Somerfield, and Waitrose and thus all of these store brands have been recalled. Now when you eat as much houmous as I do, a recall of this magnitude makes life interesting. Luckily a year ago Dan and I began attempting to duplicate the English Houmous recipe. Like many ethnic foods, what we eat here doesn’t quite follow the traditional recipes. Though it may not be exact, this may help satisfy your houmous cravings in this national crisis.

    English Supermarket Houmous

    English houmous is creamy and lacks the olive flavour of traditional houmous, and due to variations garlic should be adjusted to taste.

    250g dried garbanzo beans (or 2 cans)
    1/2 cup sunflower oil
    1/2 cup water, retain from cooking
    1/2 cup tahini
    1/3 cup lemon juice
    1/3 tsp salt
    1/3 tsp paprika
    1 garlic clove

    1. Night before- If using dried peas bring the peas to a boil in 5 cups of water. Boil for three minutes, then remove from heat and cover. Leave overnight.

    2. Drain and rinse the peas (both dried & canned) in batches and place on a paper towel. Run each batch over with a rolling pin. Then remove any loose skins.

    3. Once the skins are removed, place in pressure cooker with 5 cups of water. Bring to pressure and cook for 25 minutes and let pressure drop naturally.

    4. Drain the chickpeas, but make sure to retain a 1/2 cup of cooking water.

    5. Pour all the chickpeas in the food processor and add all the other ingredients. You want to blend them for about 2 minutes. The longer you blend it the smoother it is. It goes very creamy when you've got it right.

    6. The mixture will be a bit runny, but it firms up as it cools.


    And to make the green spinach houmous shown:

    Remove about half the houmous (500-600 grams) from the food processor. Then to the remaining houmous add the following and blend again until even.

    5 ounces frozen spinach (thaw before blending)
    1 tablespoon chopped onions
    1 1/2 teaspoons dried parsley
